Without vitamin C, collagen formation is disrupted, causing a wide variety of problems throughout the body.&lt;/p&gt; &lt;p&gt;A deficiency of vitamin C causes the disease scurvy. Scurvy is rarely seen today except in alcoholics who receive their entire calorie intake from alcohol. Scurvy causes bleeding and inflamed gums, loose teeth, poor wound healing (purplish spots called petechiae), easy bruising, bumps of coiled hair on the arms and legs, pain in the joints, muscle wasting, and many other problems.&lt;/p&gt; &lt;p&gt;Foods rich in vitamin C include fruits and vegetables such as oranges, grapefruit, broccoli, spinach, tomatoes, potatoes, strawberries, and sweet red peppers. Vitamin C is easily damaged during the food preparation stage, such as during chopping, exposure to air, cooking, boiling, and being submerged in water. Men should consume more vitamin C than women and individuals who smoke cigarettes are encouraged to consume 35 more mg of vitamin C than average adults. This is due to the fact that smoking depletes vitamin C levels in the body and is a catalyst for biological processes which damage cells. As little as 5-7 mg a day will prevent scurvy, and the average American gets about 72 mg a day.&lt;/p&gt; &lt;p&gt;Vitamin C is an important part of a healthy diet. It is not a miracle drug, and may cause harm if taken in extreme excess. Here is a list of foods that are excellent sources and high in vitamin  C. 1. Parsley, 2. Broccoli, 3. Bell peppers, 4. Strawberries, 5. Oranges, 6.  Lemon juice, 7. Papaya, 8. Cauliflower, 9. Kale, 10. Mustard greens, 11.  Brussels Sprouts. Don&amp;rsquo;t go poking your nose up, you just might be passing up  good health. You can learn to acquire a taste for these foods. Don&amp;rsquo;t tackle them  all at once, take just one at a time. You will notice that some of these foods  can be produced right in your garden. For example, mustard greens will grow  readily if just put seed into the ground. A little care and in within just 3 or  4 weeks you will be able to have fresh greens. This is the time of year that I  have to start getting my garden ready for greens such as mustard greens and  lettuce. I usually have a bed of fresh greens that I start using in the middle  of January or at the latest, early February. I have fresh greens for at least 3  months out of the year, January through April. Sometimes even late as May.&lt;/p&gt; &lt;p&gt;If you suffer frequent colds or infections, poor wound healing or lung  related problems, this could be an indication that there is a need for more  foods that are high in vitamin C foods. If not taken naturally, through fruits and vegetables, a supplement should be taken. Not every one of us eats the proper foods which are needed to receive the proper amounts of vitamins and nutrients. In my opinion, we should be taken supplements to replenish/sustain the vitamins and nutrients our bodies need.&lt;/p&gt; &lt;p&gt;I'm a huge proponent of supplements. Ever since my days as an active sports enthusiast, I've been taking supplements, including additional Vitamnin C. In addition, vitamin C is required for the synthesis of carnitine, a small molecule that is essential for the transport of fat to cellular organelles called mitochondria, for conversion to energy (1).&lt;/p&gt; &lt;p&gt;Vitamin C is also a highly effective antioxidant. Even in small amounts vitamin C can protect indispensable molecules in the body, such as proteins, lipids (fats), carbohydrates, and  nucleic acids (DNA and RNA) from damage by free radicals and reactive oxygen species that can be generated during normal metabolism as well as through exposure to toxins and pollutants (e.g. smoking). Vitamin C may also be able to regenerate other antioxidants such as vitamin E (1).&lt;/p&gt; &lt;p&gt;Causes of Vitamin C deficiency:&lt;/p&gt; &lt;p&gt;Severe vitamin C deficiency has been known for many centuries as the potentially fatal disease, scurvy. By the late 1700's the British navy was aware that scurvy could be cured by eating oranges or lemons, even though vitamin C would not be isolated until the early 1930's. Symptoms of scurvy include bleeding and bruising easily, hair and tooth loss, joint pain and swelling. Such symptoms appear to be related to the weakening of blood vessels, connective tissue, and bone, which contain collagen.&lt;/p&gt; &lt;p&gt;The amount of vitamin C required to prevent chronic disease appears to be more than that required for prevention of scurvy.
